Instant Pot Pulled Pork!

Crazy good, and crazy easy! Why? Cause it all takes place in a single pot…an instant pot! So buckle up, buttercups, we’re in for a ride!

Ingredients:

  • 3 tbsp olive oil (the average shit)
  • 4-5 lbs boneless pork shoulder or butt, chopped into fist-sized pieces
  • 4 tbsp light brown sugar
  • 2 tsp ground mustard
  • 2 tsp koser salt
  • 2 tsp ground black pepper
  • 1 tsp onion powder
  • 1 tbsp smoked paprika
  • 1 tsp garlic powder
  • 1/2 tsp cayenne pepper
  • 1 1/2 cup vegetable or chicken broth
  • 2 tbsp worcestershire sauce
  • 2 tsp liquid smoke (optional)
  • One 28 oz container BBQ sauce

Steps:

  1. Mix the brown sugar together with all of the spices in a large, shallow bowl, until well incorporated
  2. Coat each of the pork chunks into the dry rub mixture, coating on all sides
  3. Add the olive oil into the instant pot and set it to saute, allowing it to come to full heat
  4. Add 3-4 pieces of pork, being sure not to overcrowd the pot, ensuring each piece has a full edge searing at a time
  5. Cook the pieces, again ensuring each side of each piece gets a nice sear, about 1-2 minutes per side
  6. Remove the fully cooked pieces onto a plate (no paper lining! we want those heavenly juices *that’s what she said?*), and add the remaining meat, repeating the searing (or work in batches if you have more)
  7. Once all of the meat is seared and set aside, turn off the heat and deglaze the pan with the broth, scraping up any bits stuck on the bottom
  8. Add in the worcestershire sauce (and liquid smoke, if using), and stir to combine
  9. Re-add the pork pieces, secure the pot lid, and turn on the pressure cooker settings to Manual / High / 60 minutes
  10. Cook until the timer goes off, then release the vent to depressurize
  11. Turn off the heat, remove the lid, and pour out as much of the pure liquid as you can without losing any meat!
  12. Pour in a whole 28 oz bottle of your favorite BBQ sauce and fuckin’ enjoy!
