Yeah, yeah…you can buy a bottle of Caesar salad dressing and a bag of crappy ass croutons at the store…or you can make EVERY piece from scratch and it will taste a million times better!

Ingredients:
- 2 egg yolks
- 2 tsp Dijon mustard
- 1 tsp red wine vinaigrette
- 1 1/4 cups olive oil (the good shit)
- 2 cloves grated garlic
- 2 tsp anchovy paste
- 2 tbsp fresh lemon juice
- 1/3 cup freshly grated parmesan
- S&P to taste
- Crusty loaf of bread, preferably 1-2 days old
- 1/4 cup olive oil (the decent shit)
- More parmesan…ah yeah
Steps:
- Make the dressing starting with homemade mayo! Whisk together the egg yolks, Dijon, and red wine vinaigrette until smooth and it begins to thicken
- Slowly drizzle in the olive oil while you continue whisking – this forms the mayo
- Whisk in the grated garlic and anchovy paste and stir until all ingredients are thoroughly combined
- Add in the lemon juice and freshly grated parmesan and stir again, thoroughly
- Season to taste with salt and pepper, then set aside
- To make the croutons, add the remaining olive oil (roughly 1/4 cup) into a large skillet and heat over medium high
- Dice the bread into crouton-sized chunks, then toss into the skillet, being sure to coat each break piece in the olive oil so it evenly cooks
- When they start going golden brown, toss in with more parmesan, coating evenly
- Continue cooking until the croutons are golden brown and the parm has melted, then remove from heat and set aside
- Tear or cut the romaine into chunks
- Drizzle a tad bit of lemon juice onto the leaves for some extra bite
- Of course, toss in the dressing and croutons!
- Top with a bit more fresh parm…and serve!
