Dips and Shit!

This week’s class is a little different…we’re gunning for dips! Below are four fan favorites – all super easy, super tasty, and sure to be loved! Recommendations: Serve the Baba Ganoush or Hummus with pita bread, serve guac with tortilla chips, and serve artichoke dip with zucchini…psych, it’s a fuckin’ artichoke. Enjoy!

BABA GANOUSH

  • 1 medium sized eggplant
  • 1 clove of garlic, finely diced
  • 1 tbsp lemon juice
  • 1/3 cup tahini
  • 1/3 cup olive oil (the good shit!)
  • A handful of fresh parsley, finely chopped
  • 3/4 tsp salt, to taste
  • 1/2 tsp ground cumin
  • 1/4 tsp smoked paprika

Steps:

  1. Preheat oven to 450F
  2. Halve the eggplant, brush with oil, and place face down on a foil-lined baking sheet in the oven for 40 minutes
  3. Remove and, once cooled for a few minutes, scoop out the inside fleshy part (no Chiani needed) and discard the skin
  4. Strain the water from the flesh as much as possible
  5. In a medium sized mixing bowl, combine the smushed eggplant flesh, minced garlic, and lemon juice until the lemon starts to break apart the eggplant fibers
  6. Mix in the tahini, olive oil, parsley, salt, and cumin and stir until fully combined
  7. Serve with a topping of smoked paprika and a drizzle of olive oil

GUACAMOLE

  • 2 avocados
  • 2 tbsp lime juice
  • 1/4 cup finely diced yellow or white onion
  • 1-2 Roma tomatoes, finely diced
  • 1/2 tsp garlic salt
  • 1/4 tsp cayenne pepper
  • Fresh cilantro to taste
  • Salt and pepper to taste

Steps:

  1. Mash the crap out of the avocados, after removing the pit and skin (more skin!)
  2. In a medium bowl, combine all remaining ingredients and stir vigorously
  3. Serve

HUMMUS

  • 1 (15 oz) can garbanzo beans (i.e. chickpeas)
  • 1/4 cup lemon juice
  • 1/4 cup tahini
  • 3-5 cloves of garlic, peeled
  • 3-4 tbsp olive oil (the good shit)
  • 1/2 tsp cumin
  • 1 tsp paprika
  • Salt, pepper to taste
  • Olive oil to serve on top

Steps:

  1. Add all ingredients into a kick-ass food processor and blend until everything is fully incorporated
  2. At 30 second intervals, pause the processor and scrap down the sides using a rubber spatula
  3. If too chunky, add some water or additional olive oil to thin out
  4. Serve in a bitchin’ bowl

ARTICHOKE DIP

  • 1 cup mayo
  • 1/2 tbsp Worcestershire sauce
  • 1 tsp lemon juice
  • 1/2 tsp garlic powder
  • 1/4 tsp onion powder
  • Salt and pepper to taste

Steps

  1. Mix that shit and serve
