Easy Peasy Cheesy Bites!

Everyone loves shit like cheeze-its, goldfish, etc. But what if you could make this shit yourself, healthier, and at a fraction of the cost?? Well, here you go!

Ingredients:

  • 8 oz sharp cheddar cheese, shredded
  • 4 tbps unsalted butter
  • 1 cup AP flour
  • 1 tsp kosher salt
  • 2 tbsp cold-ass water

Instructions:

  1. Pulse all ingredients except the water in a food processor so it evenly combines
  2. Slowly add in the water, until it forms into a dough
  3. Remove the dough from the processor and tightly wrap in saran wrap and then put into the fridge to chill for at least 20 minutes
  4. Place the dough on a lightly floured surface and use a rolling pin to roll out into a desired thickness (about 1/4″)
  5. Use whatever you have on hand to cut out small shapes from the dough and place them on a greased parchment papered baking sheet (I personally used a bottle cap which was great!)
  6. You will likely need to reform the dough ball and roll it back out, cutting more shapes as you go until you use up all the dough
  7. Bake the ‘pieces’ at 350F for 15 minutes, until nice a d fluffed and crispy
  8. Serve…and enjoy!!
