One Pot Creamy Broccoli and Spinach Orzo

This dinner is like an orgy of awesomeness: one-pot for easy clean-up, super quick start-to-finish, HEALTHY loaded with veggies, and oh-so comforting! dive in!

Ingredients:

  • 2 tbsp olive oil (the decent shit)
  • 2 crowns of broccoli, chopped (should equal 3+ cups)
  • 4 cloves garlic, minced
  • 16 oz orzo pasta
  • 1/2 tsp paprika
  • 1/8 tsp cayenne
  • 1/2 tsp each: onion powder, dried thyme, ground rosemary, dried basil
  • 2 cups vegetable broth
  • 2 cups whole milk
  • 4 cups packed spinach
  • 1 cup fresh grated parmesan
  • S&P

Steps:

  1. In a large pot, heat 2 tbsp of olive oil over medium heat
  2. Throw in the broccoli along with some S&P to taste and cook, stirring frequently, until the broccoli starts to brown slightly, anywhere from 5-7 minutes (depending on the size of broccoli chunks)
  3. Add in the garlic, all of the orzo, and remaining spices, stirring and sauteing for another minute until the orzo begins to get slightly toasty
  4. Pour in the veggie stock and milk and stir well until both liquids become unified
  5. Cook, stirring frequently, for 10-11 minutes, until the majority of the liquid has been absorbed
  6. Remove the pot from heat and stir in the spinach and parm thoroughly, allowing the cheese to melt
  7. Serve and enjoy!
