
Hey all! Apologies for the short hiatus, but Honey Badger is back in full swing! The last few weeks were a bit insane, so I resorted to some super easy, super tasty, super ‘healthy’ dishes I craved. One being…the best goddamn brussel sprouts recipe of your life. I’m sure I’m spelling something wrong, but I don’t give a shit.
Ingredients:
- 5 tbsp unsalted butter
- 1 yellow onion, finely diced
- 1 to 1.5 lb brussel sprouts, ends trimmed off and cut in half (if big)
- 2 tsp salt
- 1 tsp ground black pepper
- 1 tsp cayenne pepper (or double it if you like heat!)
- 1 tsp umami powder (optional)
- 3/4 cup heavy cream
- 1/2 cup sharp cheddar cheese
- 1/2 cup gruyere cheese
Steps:
- Preheat the oven to 375F
- In an oven-proof large skillet, melt the butter until it becomes frothy
- Add in the onion and brussel sprouts, mixing so the butter coats all of the veggies (if it doesn’t fully coat, add a tbsp of olive oil)
- Add in the salt, pepper, cayenne, and umami (if using) and cook the veggies until soft, about 10 minutes
- Remove from heat, and add in the heavy cream and cheeses
- Mix all ingredients together, then place in the oven and bake for 14 minutes
- Reset the oven to broil (500F) and broil for an additional 1-2 minutes to form a nice crust on the top
- Remove from the oven and allow to cool for about 5-10 minutes
- Serve hot and enjoy!
