Best Damn Brussel Sprouts EVA!

Hey all! Apologies for the short hiatus, but Honey Badger is back in full swing! The last few weeks were a bit insane, so I resorted to some super easy, super tasty, super ‘healthy’ dishes I craved. One being…the best goddamn brussel sprouts recipe of your life. I’m sure I’m spelling something wrong, but I don’t give a shit.

Ingredients:

  • 5 tbsp unsalted butter
  • 1 yellow onion, finely diced
  • 1 to 1.5 lb brussel sprouts, ends trimmed off and cut in half (if big)
  • 2 tsp salt
  • 1 tsp ground black pepper
  • 1 tsp cayenne pepper (or double it if you like heat!)
  • 1 tsp umami powder (optional)
  • 3/4 cup heavy cream
  • 1/2 cup sharp cheddar cheese
  • 1/2 cup gruyere cheese

Steps:

  1. Preheat the oven to 375F
  2. In an oven-proof large skillet, melt the butter until it becomes frothy
  3. Add in the onion and brussel sprouts, mixing so the butter coats all of the veggies (if it doesn’t fully coat, add a tbsp of olive oil)
  4. Add in the salt, pepper, cayenne, and umami (if using) and cook the veggies until soft, about 10 minutes
  5. Remove from heat, and add in the heavy cream and cheeses
  6. Mix all ingredients together, then place in the oven and bake for 14 minutes
  7. Reset the oven to broil (500F) and broil for an additional 1-2 minutes to form a nice crust on the top
  8. Remove from the oven and allow to cool for about 5-10 minutes
  9. Serve hot and enjoy!
