Can this whole thing actually be done in a single pot? Is it seriously so tasty that it feels like creamy gourmet goodness? Does a honey badger shit in the woods?…..well, the answer to the first two questions at least is YES.
Ingredients:
- 16 oz short, curvy pasta (cavatappi, rotini, fusilli…whatever you prefer!)
- 2 cup whole milk ricotta cheese
- 2 large lemons, grated and juiced (separately)
- 3/4 cup grated parmesan
- 2-3 tsp garlic powder
- 1 tsp red pepper flakes
- 1/4 cup olive oil
- S&P
Steps:
- Bring a large pot of heavily salted water to boil and cook the pasta based on the package directions
- Reserve 1/2 cup pasta water before draining
- In the pot you used to cook the pasta, mix together the ricotta, lemon juice and zest, parmesan, garlic powder, red pepper flakes, and olive oil – season well with salt and pepper to taste
- Mix the drained pasta into the cheese mixture and add in the reserved pasta water to thin out and allow the sauce to begin coating the pasta
- Heat coated pasta over medium heat until the sauce is fully heated through and then…
