Easy One Pot Lemon Ricotta Pasta!

Can this whole thing actually be done in a single pot? Is it seriously so tasty that it feels like creamy gourmet goodness? Does a honey badger shit in the woods?…..well, the answer to the first two questions at least is YES.

Ingredients:

  • 16 oz short, curvy pasta (cavatappi, rotini, fusilli…whatever you prefer!)
  • 2 cup whole milk ricotta cheese
  • 2 large lemons, grated and juiced (separately)
  • 3/4 cup grated parmesan
  • 2-3 tsp garlic powder
  • 1 tsp red pepper flakes
  • 1/4 cup olive oil
  • S&P

Steps:

  1. Bring a large pot of heavily salted water to boil and cook the pasta based on the package directions
  2. Reserve 1/2 cup pasta water before draining
  3. In the pot you used to cook the pasta, mix together the ricotta, lemon juice and zest, parmesan, garlic powder, red pepper flakes, and olive oil – season well with salt and pepper to taste
  4. Mix the drained pasta into the cheese mixture and add in the reserved pasta water to thin out and allow the sauce to begin coating the pasta
  5. Heat coated pasta over medium heat until the sauce is fully heated through and then…
  6. Serve and enjoy!
