Best Damn Gazpacho!

Easily the fastest, most delicious summer dish of all time! A handful of fresh vegetables and a blender and 10 minutes…boom, heaven!

Ingredients:

  • 2 lbs ripe Roma tomatoes, halved and de-seeded
  • 1 cucumber, peeled
  • 1 green pepper, depending on heat preference (bell, anaheim, etc.) – I prefer anaheim
  • 1/2 white or yellow onion, cut in quarters
  • 4 garlic cloves
  • 1/2 cup olive oil
  • 1 tbsp sherry or rice vinegar
  • 1 tsp cumin
  • S&P to taste

Steps:

  1. Put all that shit into a blender or food processor
  2. After 1 minute, taste test the texture and if needed, add more olive oil (it shouldn’t be too ‘soupy’ – if it is, blend more
  3. Season more with S&P to taste!
  4. Store in the fridge for at least 1 hour before serving, then enjoy!
  5. That’s fucking it!
