Easily the fastest, most delicious summer dish of all time! A handful of fresh vegetables and a blender and 10 minutes…boom, heaven!

Ingredients:
- 2 lbs ripe Roma tomatoes, halved and de-seeded
- 1 cucumber, peeled
- 1 green pepper, depending on heat preference (bell, anaheim, etc.) – I prefer anaheim
- 1/2 white or yellow onion, cut in quarters
- 4 garlic cloves
- 1/2 cup olive oil
- 1 tbsp sherry or rice vinegar
- 1 tsp cumin
- S&P to taste
Steps:
- Put all that shit into a blender or food processor
- After 1 minute, taste test the texture and if needed, add more olive oil (it shouldn’t be too ‘soupy’ – if it is, blend more
- Season more with S&P to taste!
- Store in the fridge for at least 1 hour before serving, then enjoy!
