With Thanksgiving just around the corner, what better time to introduce the best goddamn green bean casserole of all time?? Fuck the can of condensed cream of mushroom soup…but we will still cheat and use French’s fried onions 😉

Ingredients:
- 1 lb fresh green beans, cleaned and ends snapped off
- 6 tbsp unsalted butter
- 1 medium onion, diced
- 12 oz baby bella or cremini mushrooms, sliced
- 4-5 cloves garlic, finely diced
- S&P
- 2 tbsp AP flour
- 3/4 cup vegetable broth
- 1 1/4 cup half and half
- 1/2 cup grated Parmesan cheese
- 1-2 cups French’s fried onions
Steps:
- Preheat the oven to 400F
- Bring a large pot of heavily salted water to boil
- Add in the green beans and blanch for 4-5 minutes, until bright green
- Remove the green beans into a separate bowl of ice water to stop the cooking
- In a large skillet, melt 4 tbsp of butter on medium heat
- Add the onions and cook for abut 8 minutes, until golden browned and lightly caramelized
- Add the sliced mushrooms, garlic, S&P, and cook for an additional 3-5 minutes, until mushrooms are lightly browned on the edges
- Sprinkle the flour over the cooked onions / mushroom mixture and stir until fully coated
- Add the broth and stir until the sauce begins to thicken – about a minute
- Add in the half-and-and and continue cooking for about 6 minutes
- Halfway through the cook time after adding the half-and-half, stir in the Parmesan until incorporated
- Remove from heat and add in the blanched green beans, stirring until everything is coated and evenly distributed
- Pour this mixture into an over-safe casserole dish and top with the French’s fried onions
- Cook in the oven for 15 minutes, until bubbling along the edges
- Allow to cool for a few minutes and then serve and enjoy!
