Cajun Style Cod with Garlic Parmesan Rice!

This dish needs no introduction…just prepare yourself for pure, healthy deliciousness!

Cod Ingredients:

  • 2 filets of cod (or any other flaky white fish)
  • 1/3 cup unsalted butter, melted
  • 1 tbsp olive oil (the good shit)
  • 2 tbsp garlic powder
  • 2 tbsp smoked paprika
  • 2 tsp cayenne
  • 1 tbsp dried oregano
  • 1 tbsp onion powder
  • S&P

Rice Ingredients:

  • 4 tbsp salted butter
  • 1 tbsp olive oil (the medium shit)
  • 1 cup Jasmine rice (thoroughly rinsed!)
  • 1 tbsp garlic powder
  • 1 tsp dried oregano
  • 1 3/4 cups water
  • 3/4 cup milk
  • 1 cup parmesan

Steps:

  1. In a medium-sized pan, melt down 2 tbsp of the salted butter along with the 1 tbsp olive oil on medium heat
  2. Add in the rice, garlic powder, and oregano and allow it to cook until it starts to crackle and the rice browns slightly
  3. Add in the water and 1/2 cup of the milk, stirring well, and allow it to come to a strong rolling boil
  4. Reduce the heat to a low simmer and cover – allow this to sit for about 15 minutes, until the rice has absorbed most of the water / milk
  5. Before serving, stir in the parmesan, the remaining 2 tbsp of salted butter, 1/2 cup milk, and season to taste with S&P
  6. Preheat the oven to 400F and line a deep 8×8 baking pan with aluminum foil
  7. Place the cod on the baking sheet and sprinkle with S&P
  8. Pour the melted butter and olive oil evenly over the cod (no, it’s not too much butter!)
  9. Top each filet evenly with the spices and cook in the oven for 13-15 minutes – be careful not to overcook!
  10. Allow the fish to sit for only a few minutes after removing from the oven, then serve with a lovely side of warm rice…and enjoy!
