Healthy Shit: Baked Salmon and Zucchini Fritters

Gourmet AND healthy?? Hells to the yes! Seriously, these fritters will blow. Your. Friggin. Mind.

Ingredient List:

  • Fresh salmon (or thawed from frozen)
  • Lemon Juice
  • Olive Oil
  • Dijon mustard
  • 2 garlic cloves, sliced
  • S&P
  • Fresh parsley
  • 2-3 Zucchinis
  • 1/2 yellow onion, diced
  • 2 eggs, beaten
  • 1/2 cup flour
  • 1/2 cup goat cheese, crumbled
  • 2 tbsp olive oil, for frying

Steps:

  1. Pre-heat the oven to 450F
  2. Place the salmon onto a greased / lined baking tray
  3. Top the salmon with the following ingredients, in order: Lemon juice, olive oil, mustard, sliced garlic, S&P, and parsley
  4. Place that fucking marvelous sight of a salmon into the oven and cook for 13-15 minutes (don’t overcook!)
  5. Using a cheese grater, grate the zucchini into a cheesecloth-lined bowl (skins still on)
  6. Sprinkle the grated zucchini with a touch of sea salt
  7. Cinch the cheesecloth and squeeze out as much liquid from the zucchini as possible, then return to the bowl
  8. Add in the diced onions, eggs, goat cheese, flour, S&P and mix thoroughly
  9. Heat the olive oil on a large-sized skillet on medium heat
  10. Once the pan / oil is hot, scoop out portions of the zucchini mixture and flatten slightly so they are like pancakes, being sure to not let the edges of each fritter touch one another
  11. Cook the fritters for about 3-4 minutes per side, looking for a nice golden color and crust to form
  12. When the fritters are cooked, remove them onto a paper towel-lined plate and serve hot!
