A classic for years, tiramisu is so simple, so fucking quick and easy…and SO delicious!
Ingredients:
- 4 large eggs, separated (save the whites for another recipe – you’ll only need the yolks)
- 1/2 white cane sugar
- 3/4 cup heavy cream
- 8 p mascarpone
- 2 cups extra strong coffee
- 4 tbsp cognac / brandy
- 2 tbsp unsweetened cocoa powder
- ~18-20 ladyfingers
- a handful of M&Ms or 2 tbsp cocoa powder
Steps:
- Make the coffee and then turn the heat off, allowing it to cool to room temperature
- Using a hand mixer, whip together the 4 egg yolks and 1/4 cup of white sugar until it fully incorporates into a pale yellow color
- In a second bowl, whip together the cream and other 1/4 cup white sugar until medium stiff peaks form
- Mix in the mascarpone and beat on low setting until fully incorporated
- Combine the mascarpone mixture with the egg / sugar mixture and then set aside
- Once cooled, mix together the coffee and cognac / brandy in a large but shallow bowl
- Using a microplane, gently grate a few M&Ms into the bottom of an 8×8 plan to form a layer of dusting
- Briefly dip ladyfingers into the coffee mixture, and then place in rows at the bottom of the dish
- Once a layer is complete, use a rubber spatula to coat a layer of the mascarpone mixture on top
- Repeat a second layer with the coffee-dipped ladyfingers, followed by the remaining mascarpone mix
- Grate another layer of M&Ms on top so there is an even dusting
- Cover the pan with wrap and place in the fridge to chill for anywhere from 4-24 hours
- Serve and enjoy!
